Product Description Serpa, a raw sheep's milk cheese from Portugal, is considered to be the most famous traditional cheese from the Alentejo region. This cheese has a straw-yellow colored rind and a buttery, supple to half-hard, when ripe, consistency with few holes. Aged for at least 6 months, its rind is rubbed with olive oil throughout curing. Serpa is slightly sweet in flavor with hints of local herbs and grasses. It is wrapped in a white linen cloth for support, which gives it a decorative artisan appearance. Serpa is typically served before a meal, sliced thinly.
