Inspired by Holland's cheese making legacy, Kenny Mattingly began making his own cheeses in the summer of 1998 with the strong desire to produce authentic, natural gourmet cheeses. The milk used in Kenny's cheeses comes entirely from healthy hormone-free cows raised on the Mattingly farm. Kenny's unique Jarlsberg-style Swiss has a nutty, buttery taste with honey undertones. This cheese has a surprisingly soft texture, is never dry or too bitter, and has an exceptional depth of flavor.
