I absolutely adore this cheese. I used to be a cheese steward at an upscale grocery store and this is was my absolute top selling soft-ripened. Because it is a triple cream soft-ripened, it is extremely rich and buttery flavored. When young, it has a firm, sweet taste but as it ages it gets a distinct hint of mushroomy flavor characteristic of brie. It is wonderful with fruit but it is incredible on crusty bread or grainy crackers. Enjoy!

I tried this cheese recently and loved it. It is somewhat stinky, it has a mild flavor with a slightly piquant aftertaste. I assume because of the mold. It also gives you an ammonia hit, like camembert, but very strong, in my opinion. I did not dislike this. I loved the cheese. I had it in salad, which was ok, and with crunchy wheat/grainy bread and it was excellent this way.
