Vinegar is the primary flavor I find in this cheese - which is much sweeter than the Tintern that I ordered with it. It is very good, but I am unsure of my willingness to nibble on much of it as a standalone treat. It really needs to be eaten with something in order for the vinegar to find a balance. Excellent and highly different. A great choice for the cheese lover looking for something unusual.
