Other than Cabot Creamery, Grafton village is my next favorite cheese manufacturer. I can't say I've bought a five pound cheddar before but I have bought their smoked vermont cheddar on occasion and since this was the only size to review, that's what I'm doing. This is a delicate white cheddar, aged and then smoked to perfection. To really enjoy this cheese you need to serve it at room temperature. Serving it cold really reduces the smoky taste to me. This is on that I love to put on burgers with maybe some bacon and served melted for a true gourmet burger. It does equally well on sandwiches, especially something more hearty like roast beef on a very crusty bread. A wonderful cheese
